Banana Bread
Moist and full fresh banana flavor. Add chocolate chips for a delicious treat.

Ingredients:
5 tablespoons soy margarine, softened
½ cup granulated sugar
½ cup brown sugar
2 teaspoons vanilla
1 egg
2 egg whites
1½ cups mashed bananas
1 cup all-purpose flour
3/4 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
½ teaspoon baking powder
½ cup Silk Unsweetened, Original or Vanilla
½ cup chopped walnuts or chocolate chips, optional
Preparation:
Preheat 350 degrees. Lightly coat a 9x5-inch loaf pan with cooking spray. Using an electric mixer, beat butter, sugars and vanilla until light and fluffy. Add eggs and egg whites. Beat until well blended. Add mashed bananas.
In a separate bowl, sift together flour, soda, salt and baking powder. Add flour mixture to butter mixture alternating with Silk, ending with flour mixture. Bake in preheated oven for 60-70 minutes or until knife inserted in the center of the loaf comes out clean.
