Boulder Corn Muffins

INGREDIENTS

  • 1 1/4 cups flour
  • 1 1/2 cups cornmeal
  • 3 Tbsp. cornstarch
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 2 cups Silk Unsweetened or Silk Original or DHA Omega-3 & Calcium
  • 1/4 cup canola oil
  • 3-4 Tbsp. sugar (or sweetener of choice)
  • additional canola oil for greasing muffin tins

PREPARATION

Preheat oven to 400°F.

Mix the dry ingredients together in a large bowl. Add Silk, oil and sugar or honey. Mix until thoroughly combined.

Lightly oil 12 muffin tins and divide batter among them, filling each 3/4 full. Bake for 15-18 minutes. Serve hot.
