Chocolate Bran Snack Cake
INGREDIENTS
- 2/3 cup Kellogg’s® All-Bran Buds cereal
- 1 cup flour
- 2/3 cup sugar
- ¼ cup natural cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- ¼ cup vegetable oil
- ½ cup unsweetened applesauce
- 1 Tbsp white vinegar
- 1 tsp vanilla
- 1 cup Silk Chocolate soymilk*
- powdered sugar, for dusting, optional
PREPARATION
Preheat oven to 350°F. Coat a 20-cm (8-inch) square pan with cooking spray.
Pulverize All-Bran in a blender or food processer. In a large bowl whisk together pulverized All-Bran, flour, sugar, cocoa, soda and salt. Add oil, applesauce, vinegar, vanilla and Silk Pure Almond and mix until combined.
Bake for 25-30 minutes until top springs back and a toothpick inserted in the center of the cake comes out clean. Cool completely.
To serve, cut into 9 squares and dust with powdered sugar, if desired.
