Cold Avocado Soup with Tomato Salsa
Creamy avocados meet the bright flavors of salsa for a refreshing summer soup.
INGREDIENTS
- Soup Ingredients
- 2 ripe avocados
- 1/4 cup chopped green onions
- 1 1/2 cups Silk Unsweetened
- 1/4 cup Silk Original Creamer
- 1/2 cup ice water
- 1/4 cup fresh lime juice
- 1 tsp. salt
- Freshly ground black pepper to taste
- pinch of cayenne pepper, optional
- Salsa Ingredients
- 1 small jalapeño, seeded and minced
- 2 Tbsp. chopped fresh cilantro
- 1-2 Tbsp. fresh lime juice
- 1/4 cup minced green onion
- 1 large tomato, diced
- 1/4 tsp. salt
PREPARATION
For the soup, halve avocados and remove flesh with a spoon. In a blender purée the avocado, green onion, Silk soymilk, Silk creamer, ice water, lime juice and salt. Season to taste with black pepper and cayenne. Thin with additional soymilk if desired. Serve garnished with fresh Tomato Salsa.
For the salsa, mix all ingredients together in a small bowl. Serve as garnish for avocado soup or with tortilla chips as an appetizer.
