Green Goddess Dressing

INGREDIENTS

  • 1/4 cup Silk Unsweetened
  • 3 oz. silken tofu (1/4 block)
  • 1/4 cup mayonnaise
  • 2 Tbsp. fresh lemon juice
  • 2 Tbsp. fresh parsley leaves
  • 2 green onions, green section only, chopped
  • 8 large basil leaves, chopped
  • 1 clove garlic, minced
  • 1 tsp. Dijon mustard
  • 1/2 avocado
  • 1/2 tsp. salt
  • freshly ground pepper

PREPARATION

Place all ingredients in a blender or mini food processor and blend until smooth. Adjust salt and pepper. Chill until ready to serve.
