Lemony Sweet Pea Risotto

INGREDIENTS

  • 1 tablespoon olive oil
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, finely chopped
  • 1 cup uncooked Arborio rice
  • 2 cups quality chicken or vegetable broth
  • 1 cup Silk Original or Unsweetened soymilk
  • 1 cup fresh or thawed frozen peas
  • 1 teaspoon lemon zest
  • salt and peper, to taste
  • 2 tablespoons chopped fresh mint, to serve, optional

PREPARATION

Place a medium saucepan over medium-high heat. Add oil and onion and sauté until onion is soft, about 3 minutes. Add garlic and sauté for another minute. Add rice and cook for 2 minutes, stirring often.

Reduce heat to medium and stir in broth and Silk. Cook, uncovered, stirring frequently, for 20 to 25 minutes until rice is tender. If using fresh peas, add to rice during last 5 minutes of cooking. Remove from heat; stir in lemon zest and thawed frozen peas, if using. Add salt and pepper to taste. Divide between plates and sprinkle with fresh mint, if desired. Serve immediately.
