Mint Chocolate Truffles
INGREDIENTS
- 12 ounces bittersweet chocolate
- ½ cup Silk Mint Chocolate
- 1 tablespoon butter or soy margarine
- 1 teaspoon peppermint extract
- unsweetened cocoa powder or crushed candy canes for serving
PREPARATION
Combine chocolate, Silk, and butter or margarine in the top of a double boiler. Heat over simmering water until chocolate melts and mixture is smooth. Add peppermint. Pour mixture into a shallow dish and chill until set, approx. 1 hour. Scoop by rounded teaspoons and roll between palms to form balls. Roll in cocoa or candy canes and chill.
