Oven-Fried Zucchini
Fresh veggies become a crispy, crunchy treat in this easy, kid-friendly side dish.
INGREDIENTS
- canola cooking spray
- 2 cups cornflakes, crushed to crumbs
- 1 cup fine dry bread crumbs
- 1/3 cup grated Parmesan cheese
- 1 tsp. paprika
- 1/4 tsp. dried thyme
- pinch of freshly ground white pepper
- 1/8 tsp. cayenne pepper
- 1/2 cup flour
- 1 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 4 egg whites
- 1/4 cup Silk Original, Light Original, Unsweetened or DHA Omega-3 & Calcium
- 1 1/2 lbs. medium zucchini (about 3), ends removed, cut into 1/4-inch slices
PREPARATION
Preheat oven to 400˚F. Line a baking sheet with parchment paper and spray with canola.
On a large plate combine the cornflake and bread crumbs, cheese, paprika, thyme, white pepper and cayenne. On another plate mix the flour, salt and pepper. In a medium bowl whisk the egg whites and soymilk together. Coat the zucchini slices in the flour mixture, followed by the egg mixture, then coat with the cornflake crumbs.
Place the zucchini on the prepared baking sheet and lightly mist with canola spray. Bake for 10 minutes, then flip them over and bake an additional 10 minutes. Serve hot.
