Rice Bran Pudding
Classic rice pudding with a nutty sweet hint of bran.
INGREDIENTS
- 3 cups Silk Pure Almond Original or Vanilla almondmilk
- 1/3 cup short grain white rice or Arborio rice
- pinch salt
- 1/2 cup Kellogg's All-Bran Original cereal
- 1 tsp. vanilla extract
- 1/2 tsp. cinnamon
- 2 Tbsp. maple syrup
- 1/2 cup raisins, if desired
PREPARATION
In a medium saucepan, bring 2 ½ cups Silk, rice and salt to a boil over medium-high heat. Reduce heat to low and simmer uncovered until rice is cooked through, about 25-30 minutes.
Meanwhile combine remaining ½ cup Silk with All-Bran in a small bowl and let stand.
When rice is cooked, stir in All-Bran and Silk mixture and heat an additional 5 minutes. Remove from heat and stir in vanilla, cinnamon, maple syrup and raisins, if using. Serve warm or cold.
Serves 4
